Definition:
Ginga com tapioca is a local treat served in the kiosks at Praia da Redinha, one of the northern Natal beaches in Rio Grande do Norte.
To make ginga com tapioca, the cook takes several small fish called ginga, fries them on skewers and serves a few of them - five or six, maybe - inside Brazil-style tapioca. The fish and tapioca can also be served side by side.
Ginga is fried head, tail and all, and that's how it's eaten. It may be served in the tapioca while still on skewers, so hold the tapioca wrap down, remove the skewers and get ready for a gloriously messy finger food.
